I must be a real idiot because I find the help of no us in learning how to map my stick. Forget all the definitions just tell me "do this" to "do this". Anyone know of a web site with this type of tutorial?

First thing would be to say exactly why you are making a map at all, or exactly what you would like to accomplish by using the software.

I thought it would be to key game controls to it, like Saitek's X 54.

Iam using Microsoft force feedback stick but use ch throttle and rudder pedals other than calibrate them target the manger usually takes take and is already set up

You don't need CH Control Manager to control standard game functions with stick buttons. Just go into the game's controls mapping utility and set what you want controlled by your stick by pressing or activating the appropriate stick button when you add or change an existing game control.
If you are going to do something more complex, like set up a simple macro, or make things that do one thing on the button press and another on the button release, or make a single button do a sequence of different functions with each press, CH Control manager can do that for you. But if you create such a map you have to make sure it's loaded into your stick each time before you start your game, whether you do it manually or you make it do that automatically with CMStart. You can also alter the response curves of your stick, but the in-game utility for that is much more accurate and has many, many more options.
CM Control Manager is the best way to calibrate all your CH devices. You have to make sure it's in the correct, non-combined mode though so it sees each device separately, to have access to each device's calibration routine.
If you want to set up something more complex I can try to help explain it to you.

It is if that's what you want to do! (Most people don't bother)
Example of setting up a gunsight view:
First, you have to pause your TIR. Then Hit NumPad 5. Then, you have to unpause your TIR.
1) Pick the button you want to use by pressing it in CH Cntl Mgr. 2) Uncheck "Dx" mode 3) Check "List" mode 4) In the list mode, right-click on the commands field to "record keystrokes" 5) For the first field in the list under "Press", choose the keyboard button that pauses your TIR. 6) In the first field in the list, under "release", choose your NumPad 5 key. 7) In the second field in the list, under "press", again choose the button that pauses your TIR (toggles the pause off).
Save the map with whatever name you want, and D/L it to your stick. Make sure it loads before each time your start the game. You can use CMStart in your "startup" folder for that.
Results: In game, the first time you press your stick button, it pauses your TIR and goes to gunsight view. Press the stick button again, and it goes right back to using TIR (unpauses it).
The F5 view (central, gunsight) is the only one you have to pause TIR for, because it's your "home" view. All other Keypad views will simply go to that view without pausing TIR, for as long as you hold the key down, and then go back to TIR slewing as soon as you release it.
